Slow Cooker Meals
18 months ago we decided to invest in solar panels. We were fortunate enough to be in a position to buy our panels outright which meant we got a pretty good deal with respect to selling electricity back to the grid. We receive a payment for half of the electricity we make. However, we can use as much as we like to run the house, so even if we use all the electricity we make, we still get paid for half of it.
I now try and leave using the washing machine and dishwasher to times when the sun is shining and the panals are running the house. I started to look for other ways we could make the most of our panels. We decided to dust off an old slow cooker we found in a relatives cupboard and give it a go.
We had never bothered looking into a slow cooker before as I was under the impression that they were just for meat dishes and we have a range of diets in our house, making cooking a challenge. However, by the power of the internet I have been researching slow cooker recipes and here are some that have gone down well in our house.
Chili is fantastic in the slow cooker. I think perhaps because the spices have so long to infuse into the ingredients. Here is our favourite veggy chilli so far.

I love cauliflower cheese but all the slow cooker recipes I found used a mystery ingredient referred to as “Cheese soup”. I used the BBC Good Food recipe and poured the sauce onto the uncooked cauliflower in the crock pot instead of using the oven.
My next step is to invest in a timer switch. Then I can leave it ready before going out for the day and know it will turn itself on and off while the solar panels are at their most effective.
